It seems to be running through pipewire. Performance is OK, though it takes a while to start up. There is indeed a red/blue colour swap.
I note that the camera shows no colour swap in Firefox (visit https://webcammictest.com) which I believe also runs through pipewire. So my suspicion is that the snapshot app may be asking for the wrong thing - you probably need to talk to the snapshot developers in the first instance.
Amusingly, but also not unsurprisingly, once you're running the camera in Firefox you can start snapshot and it shows the correct colours - because Firefox asked for the correct colour format.
