Also I want to thank you and all the others that identified my issue.
Probably the +7V borke my TP4056 module and this is why it was not working when I had only 1 battery in the 2-batteries casing.
Anyway, I re-built the circuit using 1-battery -> TP4056 -> MT30865 -> Cable to microUSB -> Raspberry Pi Zero 2W.
The circuit works as intended allowing to charge the battery with the TP4056 and to run the Pi on battery.
