Assuming you followed the standard installation process, you should have been asked to setup a username/password during the initial setup. This account should be able to use "sudo" to perform privileged operations.
I've not tried Ubuntu desktop on a Pi 5 but have Ubuntu server 25.10 running well (and fast!) on several Pi 5's with 8 GB. It may be the reported poor performance has something to do with the graphics drivers...
