1. My preferrence would be AI kit as it comes with the M.2 HAT+ . Higher flexibility, less TOPS
2. Yes, you can stack another HAT on top (because of the FPC cable lenght) but you will have to source longer stacking headers in addition. Lots of posts on this here, so sorry, will not repeat myself
