Did you remember to write a 64bit RPiOS image to your SD card? 32bit ones won't run out of the box on a Pi 5.
32-bit Raspberry Pi OS images run fine out of the box on a Raspberry Pi 5. They include a 64-bit kernel (kernel8.img) that is loaded by default.
