But it does say their resistance is between 50K and 80K without any further qualification, therefore that should apply in any normal use. So whether they are resistors or not, their calculated current should be in line with a resistor of between 50K and 80K for any voltage from 0V to 3.3V, maybe with some allowance for any stated leakage current or offset voltage.
I'd say normal use for these is to connect a pulled-up GPIO to ground or a pulled-down GPIO to IOVDD. If they didn't behave like 50-80K resistors in that case I'd agree.

Measuring their resistance with a multi-meter, the meter will put constant current through them and derive a resistance number from the potential difference. The amount of current could be completely different to the amount of current that flows through them in normal use, resulting in a number outside that specified in the datasheet.
