Is this one of those $10 USB logic analysers that pretends to be a USBee or Saleae device? The command line Sigrok client can do a continuous capture with a protocol decoder enabled.I have one of those USB Logic analysers and the software can decode the I2C this is fine but the sample time is short and sometimes getting a good capture isn't possible or the data is too long for the capture.
If Sigrok continuous decode doesn't work then look at https://github.com/jjsch-dev/pico_i2c_sniffer
