Keyboard computers (400, 500, 500+) • bootloader config: Default values missing?

Using rpi-eeprom-config (or vcgencmd bootloader_config), not all values are shown. I can't see a clear picture on which ones are here, and which ones not. For example, WAIT_FOR_POWER_BUTTON is reported only after I have set it, and is missing entirely on a freshly unpacked Raspberry Pi 500+.

Given that the default values of some entries are dependent on the Raspberry Pi model, it is difficult to figure out the real state of these flags.

Am I missing some documentation here?
