Yeah, I think as folks gain experience they will be more open to alternative solutions.
But Pico boards are a convenient and popular "gateway drug" to building embedded stuff, and oftimes folks are not yet dailed into the whole hardware and software stack yet. Once folks get used to thinking about power consumption with data, they'll be able to make better decisions. It's not that much different compared to when people were using AVR Arduino boards for battery-powered applications, even though anyone who reads the MCU datasheet should be able to get the MCU under 10 uA easy.
