It sounds like it could be an issue with you using a SATA drive over USB. Maybe PINN does not include the correct drivers for your device as PINN is as minimal as possible. Do you know which drivers are used for this drive in normal Raspios, or which chipset it uses?
Now that you have managed to backup an OS, it would be interesting to know if you copied this backup to your SATA drive, is PINN able to install it from there? This might indicate if it is just a write problem or a read/write problem.
