You will need to amplify the signal from the read head, then feed it into an ADC.

Don't forget, for stereo there are two read heads. For auto-reverse (without flipping the tape or the head) there are four read heads.
Thanks. I want to (ideally) be able to turn the tape at as high a speed as possible (like 4x+ speed) and then slow down the audio, so that way I can read both directions at the same time and do that in a fraction of 45 minutes, but I'm starting to realize that it'll be a lot more expensive than I was originally imagining (that I'd be able to throw it together with a jumper wire and $3 of stuff from AliExpress).

Do you have any good resources where I can read up to understand how the amplifier and ADC are working, to know what specs I want? I want to try to do this without AI...
Well, you could Google how a tape head works.
