Check out the Hudiy https://github.com/wiboma/hudiy. It basically has most of the things you listed and you can customize almost everything. I've been using it for two months now in my 2000 Benz E.
In my build I have the newest Pi Touch Display, Pi 4B 2GB and rtl-sdr dongle v3 to receive FM signal. The dongle is connected to the factory antenna via an SMA plug and the reception is really strong even outside the city. For the rear cam I have a USB grabber with CVBS input. The new Pi Touch Display has excellent image quality. I'm really happy with my current setup.
