Seems unlikely to me. As noted by 'thagrol', the PSU provides 2.5A so, even if the SoC and wireless were sinking 1A, there would still be 1.5A for the keyboard and mouse.Is the power supply just not providing enough power when peripherals are attached or is it some other constraint?
I would try with the same hardware and SD Card but a different Pi model and see how that fares. If that's fine then it would suggest an issue with the Zero W set-up. If that is also unstable it would seem an issue with the PSU, keyboard, mouse or image.
