There is only 1 Pi OS (Bookworm), Lite means just no GUI/desktop installed so it will start in a console / CLI terminal mode.
So:
Raspberry Pi OS with desktop and recommended software
Raspberry Pi OS with desktop
Raspberry Pi OS Lite
are all the same OS.
The one with desktop image has GUI/desktop pre-installed as well and also starts that as default. But you can make it start in console / CLI terminal mode if you want. See raspi-config, or generic Linux systemd set/get default.
If OMV cannot be installed in a Linux installation that has also GUI/desktop installed, maybe you should not use OMV. But I guess it assumes you should use a non-GUI variant as is is all services based that do not need a GUI, but of course you can have a GUI.
Maybe post the URL where you read instructions for OMV
Booth Nexcloud and OMV have webbrowser interfacse, you should check if they use different ports. AFAIR (years ago) they do.
