Even if you have soldered pins you can also solder a connection wire on the side of the pin, or even to the top of the pin.
You can even solder a set of 90 degree connectors to the side.
Another way is to only solder the Pico pins that are used on the LCD - see the diagrams they give. Then you have holes to solder wires or connectors etc to the unused pins. https://www.waveshare.com/w/upload/c/c9 ... -inter.jpg
