Retropie is way behind in it's project, it was left behind two OSs ago.
So personally I would just ignore it now.
There are alternatives like https://batocera.org/ who have a Pi5 beta version.

The way I would go at it is to grab the Batocera image and use it as is, I know you don't want to do that in the end but it is the easiest way to just use it.
This should enable you to learn how it all goes together and works, especially as you say you are new to both the Pi and to Linux systems, let alone Debian/PiOS and the differences between OS versions.

Once you have a feel for it and figured out how it all works, which parts you need and how to boot Batocera (or alternatives) to HDMI-2 then you'll be good to go and know what to ask, what to tweak and what to search on when you want to add it in to a PiOS Bookworm setup.
Pretty much anything past a month or two old is useless to anyone on a Pi5 at the moment.

Unfortunately the Pi5 is new, Bookworm changes a lot with PiOS and as you can tell from ReteoPie/Batocera they are trying thieir best to get it working.
So no it is not an easy question to solve that you are asking.

EmulationStation is just a front end window or menu to the emulators and settings, you then have to get the emulator working, the interfaces working, the etc...
You can see if an emulator is work, actually you can't but you can check Pi4 progress with https://batocera.org/compatibility.php and hope it similar.
