You will have to flash your CM5 to mass-storage-gadget mode by using usbboot https://github.com/raspberrypi/usbboot , then delete the content from the eMMC.
From my point of view an eMMC compute module is not intended for NOOB users, hence I'm unable to provide further support.
Use a lite module, if you've messed up the NVMe beyond bootability you can boot from uSD or USB instead.
Recommendation is also NOT TO CHANGE the boot order unless you really know what you're doing!
