I can't believe that their instructions are so out of date.
Take a vanilla Raspberry Pi OS install, and add "dtoverlay=pitft28-capacitive" to /boot/firmware/config.txt. That should be it.
FBCP is well and truly dead.
Ensure you are looking at the capacitive version of the display. Compare the bottom image on https://thepihut.com/products/adafruit- ... ouchscreen and https://thepihut.com/products/adafruit- ... ouchscreen, noting the chip built into the orange flexi cable going into the screen in each case.
The resistive display uses an SPI touch controller, so not seeing anything with i2cdetect would be expected.
