I'd modify a smart plug, or buy one capable, add a temp sensor inside the fridge on a long cable, at which point I'm not touching mains voltage myself.
Shelly, Sonoff, Tuya all make something for that.

Then just monitor on my phone, computer, a Pi.....



Otherwise, A PicoW, connect to the control board of the colling circuit...
