Well, why not simply use a temperature and humidity sensor (i.e. DHT22). I would prefer i.e. AHT20 or SHT40 though (because of the I2C interface).
Would be less complex to get the data, but you will need to be able to mount the sensor inside of the vivarium.
You don't even need a Pi as host, a Pico W would be sufficient.
