AFAIK Retropie does not use the patched MESA driver which allows running SPI displays like shown above. Sorry, can't help. I also need to say that I don't spend my time in this OS as I'm not that interested in retro gaming on Pi.
Make use of the official OS and your SPI screen can be used to shoe a desktop. It may not be able to mirror your HDMI screen completly as wlr-randr does not have a '--scale-from <resolution >' option.
