Answered my own question. Looks like the issue was with the "lite" version of Bookworm. I saw some posts elsewhere about USB ethernet adapters having these types of issues, and abstracted the answer. Rather than trying to work out what was missing / misconfigured, I installed a full version of Bookworm (which the adapter worked with), uninstalled the GUI, then installed OMV. It worked a treat!
