As said, both will do a simple site quite well. That Apache is feature rich and Nginx is minimalistic is not quite right; they were each written with different goals and Nginx is quite feature rich in it's own right. I've used both and prefer playing around with Nginx these days.

Apache might be a better choice for a beginner just getting started because it's closely tied to PHP whereas Nginx is not so more work is needed to tie them together. That Apache is so closely tied to PHP is one of the reasons I went to Nginx.

If it matters to you, be aware that Apache is behind the times and doesn't yet support http/3.
