3) found the file in question:
/etc/NetworkManager/system-connections/"Wired connections 1.nmconnection"
And it only contains the Added DNS server (Pi-Hole's local address) entered in the Desktop connection Edit, the one listed as Primary in the connection Info. The Secondary (the gateway address) is still being acquired from elsewhere, editing the file above would accomplish nothing. The additional DNS address is getting applied by the DHCP setup/initialization I suppose, but don't have a clue how to address this?
