Is the 7" touch display 2 compatible with a HiFiBerry DIGI2 Pro on a RPI5?
Or are they using some same connectors?

you will have to be able to provide 5V and GND ro your touch display V2 -> connect it to the header on your DIGI2 Pro.

Touch display V2 does not consume a single pin from GPIO40 (apart from power).
