I ended up with
which is 100% stable and keeps temperatures below throttle threshold even under heavy load. With the above settings my rpi 500 passes stress and cpuburn-a53 tests (15 minutes each) as well as all geekbench6 tests. CPU temps in normal use are 35-45 degrees C, during geekbench6 tests <60 degrees, and even during cpuburn-a53 execution don't exceed 75 degrees. That slight overvoltage was needed for some of the geekbench6 benchmarks, as otherwise they were failing or freezing. With that overvoltage it passed all those tests multiple times, so I guess it is the final and fully stable setting for my 500.
Code:
arm_freq=2950gpu_freq=1100over_voltage_delta=5000
