I’m not sure whether or not there would be issues, because I haven’t attempted it, but the manual installation page indicates:
NOTE: The Raspberry Pi OS 'bullseye' release is not yet supported by RetroPie. Manual installation should use the previous/legacy release of Raspberry Pi OS, available here.
