What is strange is that the image-utilities work if I try to do a backup without mounting.
That sure makes it sound like Image File Utilities are fine and the problem is with the network/CIFS connection to the machine that's the destination of the backup. You could try the same backup to a flash drive mounted on /mnt instead, and if it succeeds, it's more evidence that the remote machine is the problem.
