It needs to be totally diffused otherwise light and dark spots are going to detract from your objectives. So in addition to @ame's opal diffuser, I would face the LED's away from the eye and have them reflecting off a white surface before coming back through the opal diffuser.
Its going to take a lot of experimentation to get no patterning, especially if you what it surrounding all/most the field of view. Instead of glasses it might be easier to have a box/helmet you put over your head, ideally it would need to be spherical which would be difficult to produce.
If you want this to be only colour stimulus, you need to eliminate anything the eye can focus on. I wonder if you can get diffuser contact lenses?
